  • 500 g waxy potatoes
  • 1 Garlic clove
  • 4 tbsp coarse mustard
  • 0.5 tsp freshly chopped rosemary
  • 3 rosemary sprigs

Instructions

  1. 1.

Wash the meat, pat dry and trim. Season with salt and pepper, then sear all sides in a hot pan with olive oil until browned. Remove and set aside.

  2. 2.

Preheat the oven to 160 °C (320 °F) with both top and bottom heat.

  3. 3.

Peel, wash, and quarter or eighth the potatoes.

  4. 4.

Peel the garlic, finely chop, and mix with mustard and chopped rosemary.

  5. 5.

Brush the meat with this mixture, place in a greased oven‑proof dish, arrange the potatoes around it with rosemary sprigs, season with salt and pepper, drizzle olive oil, and bake for about 40 minutes until pink inside. Turn the potatoes occasionally.
