Ingredients
- 1 kg yellow bell peppers
- 1 onion
- 20 g butter
- 1 Garlic clove
- 2 tsp paprika powder (sweet)
- 250 ml vegetable broth
- 2 tsp vinegar
- 200 g whipping cream
- Salt
- Pepper (freshly ground)
- parsley (for garnish)
Instructions

Halve the peppers, remove seeds, wash and roughly chop them.

Peel and finely dice the onion; sauté it with the pepper pieces in butter. Peel the garlic, press it into the pan, cook briefly, then add broth and vinegar and let everything simmer for 20 minutes.

Puree the soup and strain through a sieve, return to pot, stir in half of the cream, bring to a boil, remove from heat, season with paprika powder, salt, and pepper, taste, and lightly whip with an immersion blender.

Whip the remaining cream slightly. Serve the soup in bowls, topped with a swirl of whipped cream and parsley leaves for garnish.
