Ingredients

  • 250 g dried figs
  • 1 tsp Baking Soda
  • 125 g softened butter
  • vanilla essence
  • 200 g brown sugar
  • 3 eggs
  • 180 g flour
  • 1 tsp Baking powder
  • 50 g chopped walnuts
  • 50 g chopped pecans
  • softened butter (for the pudding tin)
  • 100 g butter
  • 100 g brown sugar
  • 100 g beetroot syrup
  • vanilla essence
  • 200 ml whipping cream

Instructions

    Boil the figs with 300 ml water in a pot. Remove from heat, stir in the baking soda and let cool. Then puree finely.

    Preheat the oven to 150°C (top and bottom heating).

    Beat the butter with vanilla essence and sugar until creamy. Add eggs one at a time, mixing well. Fold in the fig mixture. Mix flour with baking powder and chopped nuts, add to the butter cream and stir into a smooth batter. Pour into the greased pudding tin and seal tightly with a lid. Place the tin in a hot water bath on a deep tray or pot and bake for about 2½ hours. Keep the tin at least halfway in the water, topping up as needed.

    For the sauce, put butter, brown sugar, syrup, vanilla essence and cream into a saucepan. Stir until it boils, then simmer for about 10 minutes to thicken into a creamy caramel sauce. Remove from heat and let cool.

    Take the pudding out of the oven, open and leave for about 10 minutes. Then carefully pour it out of the tin, cut into pieces and drizzle with some sauce. Serve the remaining sauce on the side.
