Ingredients

  • 150 g dried, pitted dates
  • 1 tsp Baking Soda
  • 50 g soft butter
  • 50 g sugar
  • 2 Eggs
  • 125 g flour
  • 1 tsp Baking powder
  • 0.5 Vanilla pod
  • 1 pinch cinnamon
  • 1 tbsp Ovomaltine
  • 1 tbsp plain yogurt
  • 115 g butter
  • 115 g brown sugar
  • 140 ml whipping cream
  • 50 g cold butter

Instructions

  1. 1.

Preheat the oven to 180°C. Grease four muffin tins with butter. Place the dates and baking soda in a bowl, pour over 200 ml boiling water, let sit for a few minutes until soft, then drain. Pulse 3/4 of the dates in a food processor or with an immersion blender until smooth; chop the remaining dates.

  2. 2.

Beat the soft butter and sugar until fluffy. Add eggs, flour, baking powder, scraped vanilla, cinnamon, and Ovomaltine, mixing well. Fold in yogurt and puréed dates, then pour the batter into the prepared tins and bake for 35 minutes. Check with a toothpick.

  3. 3.

Meanwhile, for the sauce, combine butter, sugar, and cream in a saucepan over low heat, stirring until the sugar dissolves, the sauce thickens, and darkens. Carefully release the finished pudding from the tins, plate it, top each serving with a piece of cold butter, and drizzle with caramel sauce.
