Ingredients
- 1 red bell pepper
- 300 g corn kernels (1 can)
- 600 g peeled tomatoes (1 can)
- 500 g eggplant
- 1 onion
- 1 tbsp oil
- 300 g Ground Beef
- Salt
- black pepper (freshly ground)
- 500 ml meat broth
- 1 tsp chili powder
Instructions

Wash the bell pepper, halve it, remove seeds and stem, and dice the flesh. Drain the corn. Break the peeled tomatoes into pieces with two forks.

Wash the eggplant, quarter it, and cut into chunks. Peel the onion, finely dice it, and sauté briefly in hot oil in a pan; add ground beef and cook until crumbly, about 6-8 minutes. Season with salt and pepper.

Add the eggplant and stir-fry. Pour in tomatoes and broth, mix in bell pepper and corn, season with chili powder, salt, and pepper, and simmer for about 20 minutes. Serve the eggplant with meat in bowls.
