Spicy Vegetable Lamb Stew

Spicy vegetable lamb stew from Spoonsparrow is perfect to warm up on cold days.

Ingredients

  • 400 g lamb shoulder
  • 1 onion
  • 1 Garlic clove
  • 300 g sweet potatoes (or pumpkin flesh)
  • 300 g Kale
  • 75 g brown lentils
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • 1 tsp harissa
  • 150 ml tomato juice
  • 500 ml meat broth
  • 125 g cherry tomatoes
  • 10 g coriander (0.5 bunch)

    Rinse the meat under cold water, pat dry and cut into 2 cm pieces. Peel onion and garlic and dice finely. Peel sweet potatoes and cut into 3 cm cubes. Wash kale, remove tough stems and slice into 4 cm wide strips. Rinse lentils in a sieve under cold water and drain.

    Heat oil in a large pot and sear the meat in batches over high heat for about 3 minutes on all sides. Add onions and garlic and sauté together. Stir in lentils, sweet potatoes and kale, season with salt, pepper, add harissa, deglaze with tomato juice and broth. Simmer gently over low heat for about 45 minutes, stirring occasionally. Add more broth if needed.

    Meanwhile wash tomatoes and quarter them. Wash coriander, shake dry and pluck leaves. Mix tomatoes into the stew just before serving and sprinkle with coriander.
