Lactose-Free Flammkuchen

Ingredients
- 0.5 cube fresh yeast (≈21 g)
- 350 g flour
- Salt
- flour (for dusting)
- 200 g MinusL sour cream
- 2 egg yolks
- pepper (ground)
- 250 g smoked pork belly
- 3 spring onions
- 3 small red onions
- 1 Tbsp freshly chopped thyme

Dissolve the yeast in about 175 ml lukewarm water, then knead with the flour and 1 tsp salt into a smooth dough that lifts from the bowl. Cover and let rise in a warm place for about 30 minutes.

Preheat the oven to 220 °C fan. Line two baking trays with parchment paper.

On a floured surface roll out the dough, divide it into four pieces and shape each into a large flat disc. Place two discs on each tray.

Whisk the sour cream with the egg yolks until smooth, seasoning lightly with salt and pepper. Spread onto the dough leaving a narrow edge. Dice the pork belly. Wash and trim the spring onions, slicing them into thin rings. Peel the red onions and slice into fine wedges. Top the prepared discs with all ingredients. Bake in the oven for 10‑15 minutes until golden brown and crisp.

Remove from trays, lightly pepper, cut into pieces and serve.
