Ingredients

  • 10 eggs
  • 50 ml heavy cream
  • Salt
  • Pepper (freshly ground)
  • vegetable oil (for frying)
  • 120 g sheep cheese
  • 120 g cream cheese
  • 2 tbsp freshly chopped herbs (e.g., parsley and dill)
  • Lemon juice
  • 1 handful Arugula
  • 100 g chorizo (thin slices)

Instructions

    Whisk the eggs with the heavy cream. Season with salt and pepper.

    Add a little oil to a hot, non‑stick pan. Pour ¼ of the egg mixture in and cook for 3–4 minutes over medium heat until set. In a small bowl combine the feta, cream cheese and chopped herbs; season with salt, pepper and a splash of lemon juice.

    Wash and dry the arugula.

    Spread the feta cream on the finished omelets, top with arugula and chorizo slices, roll up and serve.
