Duck with Radishes

Ingredients
- 4 duck breast fillets (≈180 g)
- 1 tsp peppercorns
- Salt
- 1 tsp powdered sugar
- 400 g radishes
- 1 tsp butter
- 150 ml poultry stock
- pepper (ground)

Preheat the oven to 140°C with fan and top heat.

Rinse the duck breasts, pat dry, and cut a diamond pattern into the skin. Coarsely crush peppercorns in a mortar to season and salt the duck. In a hot pan, brown the skin side for about 5 minutes until golden brown. Flip and briefly sear the flesh side. Place on a rack in the oven (fat drips into a pan below) and roast for 20-25 minutes until pink inside.

Pour off the fat from the pan and dust the browned bits with powdered sugar. Wash and trim the radishes, leaving 2–3 cm of green. Toss the radishes with butter in the pan and let them caramelize slightly. Deglaze with stock. Season with salt and pepper and cook for about 10 minutes until tender yet firm. Finish by tasting and plate with the duck on dishes.
