Ingredients

  • 1 duck (about 2.5 kg)
  • 4 shallots
  • 2 Apples
  • 2 sprigs Rosemary
  • Salt
  • freshly ground pepper

Instructions

    Preheat the oven to 180°C with both top and bottom heat.

    Rinse the duck inside and out under running water and pat dry. Peel the shallots and cut them into slivers. Peel the apples, quarter them, remove the core, and cut into slivers. Place both in a bowl. Break off rosemary leaves and mix into the apple mixture. Season with salt and pepper. Rub the duck inside and out with salt and pepper and stuff it with the apple-shallot mixture. Tie the opening with kitchen twine and place the duck breast-side down in a roasting pan. Add about 500 ml of water and roast in the preheated oven for approximately 2 hours. Periodically spoon the drippings over the duck and turn it after one hour. Add more water if needed, and continue basting with the cooking juices. If desired, increase the temperature to 220°C toward the end to brown the duck.
