Orange Duck

- 1 duck (about 2.5 kg)
- Salt
- ground pepper
- 4 untreated oranges
- 200 ml dry white wine
- 1 tsp sugar
- 40 ml orange liqueur

Preheat the oven to 180°C fan.

Wash and pat dry the duck. Season inside and out with salt and pepper. Wash the oranges hot, dry them, and zest all of them. Squeeze juice from two oranges and fillet the other two. Add about one-third of the zest into the duck, close the opening with toothpicks, and place breast side down in a roasting pan. Pour some water over it and roast for about 30 minutes. Then flip, pour in the white wine, and continue cooking for another approximately 2 hours, basting frequently.

Caramelize the sugar in a small saucepan, then add the orange juice, orange fillets, remaining zest, and liqueur.

Switch the oven to grill mode. Pour the sauce over the duck and brown it under the grill for 10-15 minutes. Serve immediately.
