Duck Roast with Grapes

- 1 duck
- Salt
- Pepper
- 1 tsp ginger powder
- grapes (1 cup white and 1 cup blue)
- 1 onion
- 20 g butter
- 1 tbsp flour
- 0.5 l poultry broth (from a carton)
- 1 tbsp Lemon Juice
- 1 tsp cinnamon
- 1 tsp clove
- 1 tsp garlic powder
- 2 tbsp Orange juice
- 80 g grated walnut kernels
- 2 tbsp chopped walnuts

Wash the duck and rub salt and pepper on the inside and outside. Rub ginger powder inside. Wash grapes, core them and fill half into the duck. Wet a Romertopf well, place the duck in it and surround with the remaining grapes. Preheat the oven to 200°C (Ober- und Unterhitze) and roast the duck for about 120 minutes. Twenty minutes before the end of cooking peel and finely chop onions. Heat butter and sauté the onions until translucent, sprinkle flour over them and roast golden yellow. Deglaze with poultry broth and simmer for 5 minutes. Add lemon juice and spices, then stir in salt and orange juice. Fold in grated walnuts.

Arrange the cooked duck on a plate, garnish with grapes and sauce. Sprinkle chopped walnuts on top.
