Duck Breast with Pear and Blue Cheese Sauce

Ingredients
- 2 duck breast fillets (ready to cook, about 300-350 g)
- Salt
- Pepper (freshly ground)
- 500 g Brussels sprouts
- 2 small pears
- 100 ml dry white wine
- 250 ml duck stock (or poultry stock)
- 125 g Gorgonzola cheese
- 120 ml heavy cream
- Nutmeg (freshly grated)

Preheat the oven to 180°C (356°F).

Wash the meat, pat it dry and cut a diamond pattern into the skin. Season the duck breasts with salt and pepper, then sear them skin-side down in a hot pan without oil until golden brown. Flip and sear briefly on the other side. Remove and bake in the preheated oven for about 15 minutes to finish pink.

Wash, trim, halve the Brussels sprouts and blanch them in boiling salted water for 10-15 minutes.

Meanwhile peel, quarter, core and dice the pears.

Drain all but one tablespoon of duck fat from the pan and sauté the pear cubes. Deglaze with wine and stock, then simmer over medium heat for 6-8 minutes.

Dice the Gorgonzola and stir it into the sauce until melted. Add cream, season with salt, pepper and a pinch of nutmeg, and reduce to a creamy consistency for another 3-4 minutes.

Drain the Brussels sprouts, let them dry, then arrange them on warmed shallow plates with the sauce. Let the duck rest briefly, slice into strips and place atop the vegetables. Serve immediately.
