Ingredients

  • 4 duck legs (ready to cook)
  • Salt
  • ground pepper
  • 1 tbsp Olive Oil
  • 1 tsp juniper berries
  • 1 pinch cinnamon
  • 1 bay leaf
  • 2 sprigs savory
  • 100 ml red grape juice
  • 300 ml duck stock

Instructions

    Wash the duck legs, pat dry, season with salt and pepper, then sear all sides in a pan with olive oil until browned. Add the spices and herbs, deglaze with red grape juice, pour in the duck stock, and bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for 1 hour.

    Remove the cooked duck legs from the pan, let rest briefly, reduce the cooking liquid by half, season to taste. Arrange the legs on a cutting board, drizzle with sauce, and sprinkle with sea salt before serving.
