Ingredients

  • 2 duck breast fillets (about 350 g)
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp thyme honey
  • 4 yellow plums
  • 2 Celery stalks
  • 3 tart apples
  • 2 tbsp butter
  • 2 Garlic cloves
  • 100 ml heavy cream

Instructions

    Preheat the oven to 120°C (radiant heat). Wash and pat dry the duck breasts, score the skin in a diamond pattern, and sear them skin-side down in a pan without added fat until golden brown. Season with salt and pepper, flip, and cook for 1 minute on the other side. Brush the skin side with honey and bake in the preheated oven for 25-30 minutes to achieve a pink center.

    Wash, pit, and quarter the plums. Wash the celery, optionally remove fibers, and dice finely. Peel, quarter, core, and dice the apples similarly. Sauté the vegetables in butter until softened. Add pressed garlic and cook briefly. Pour in cream, cover, and simmer gently for 10-15 minutes. Season with salt and pepper.

    Slice the duck breast and arrange it on a plate with the sautéed vegetables. Garnish with clover leaves if desired and serve with thyme honey on the side.
