Duck Breast with Berries

Ingredients
- 2 duck breast fillets (≈300 g)
- Salt
- Pepper
- 4 sprigs Lavender
- 2 sprigs thyme
- 1 tbsp orange juice
- 2 tbsp honey
- 100 g raspberries

Preheat the oven to 160°C (320°F) with both fan and top heating.

Pat the duck breasts dry, score the skin in a diamond pattern. Season with salt and pepper. Sear the skin side slowly for about 5 minutes until golden brown. Flip and sear the meat side briefly. Place skin side up in an oven-safe dish.

Reserve a few lavender sprigs for garnish. Remove the remaining flowers, strip leaves from thyme, and combine both with orange juice and honey in a small saucepan to melt into a glaze. Brush this over the duck to coat the skin and bake for about 20 minutes until pink inside. Brush again midway and optionally turn on the grill briefly at the end. During the last 5 minutes scatter raspberries around the breasts.

Remove from oven, let rest briefly, slice, and serve garnished with remaining lavender sprigs.
