Ingredients

  • 250 g small duck breast fillet (1 small duck breast)
  • 1 Lime
  • 1 hazelnut‑sized piece ginger
  • 2 tbsp oil
  • 250 g pumpkin flesh
  • 1 red bell pepper
  • 1 stalk leeks
  • 1 Garlic clove
  • 50 g soy sprouts
  • 3 tbsp rice wine
  • soy sauce
  • ground pepper
  • salt (to taste)

Instructions

    Remove skin from duck breast. Slice into thin strips. Rinse lime and zest. Peel ginger and dice small. Mix 1 tbsp oil with lime zest and ginger; rub onto duck. Cover and refrigerate for 15 minutes.

    Cut pumpkin into cubes. Quarter bell pepper, rinse, slice into strips. Trim leeks, rinse, cut into rings. Peel garlic.
