Duck Curry with Okra and Asian Noodles

Ingredients
- 700 g duck breast fillet
- 2 tbsp Curry Powder
- chili peppers
- 8 okra pods
- 1 onion
- a splash white wine
- oil
- handful soy sprouts
- 1 tbsp Cornstarch
- Salt
- ground pepper
- 250 g rice noodles

Wash the soy sprouts. Season the duck breast, place it in a baking tray, pour a little water over it and roast in the oven at 200°C for about 1½ hours, basting with water occasionally. Remove when tender.

Slice the roasted duck into 1 cm thick pieces. Peel and finely chop the onion. Wash the okra and cut into slices. Heat oil in a pan, sauté the onion, add the duck, soy sprouts and okra, and stir-fry. Stir in curry powder, pour in wine, let it reduce briefly, then add water, bring to a boil, and season with salt, pepper and chili.

Whisk cornstarch with cold water and use it to thicken the sauce. Cook the rice noodles according to package instructions, drain well, and plate alongside the duck slices.
