Duck Breast with Kumquats

- 2 duck breast fillets (about 350 g each)
- Salt
- black pepper (freshly ground)
- 2 tbsp oil
- 600 g kumquats
- 8 Tbsp sugar
- 150 ml cherry brandy
- 2 star anise
- 4 cloves

Pierce the kumquats all around with a wooden skewer. Bring 400 ml water and 5 tbsp sugar to a boil, then simmer the kumquats for about 3 minutes. Remove the kumquats from the liquid. Mix 250 ml of the liquid with cherry brandy, star anise, cloves, and the remaining sugar; bring to a boil again. Simmer the kumquats in this mixture for another 3 minutes, then remove from heat and keep warm.

Score the fat side of the duck breasts in a diamond pattern and season all over with salt and pepper.

Heat oil in a pan over high heat and sear the duck breasts skin-side down until browned. Flip, transfer to a preheated oven at 200°C (400°F), and roast for about 15 minutes until pink; flip again after 10 minutes.
