  • 2 duck breast fillets
  • Salt
  • Pepper (freshly ground)
  • 1 onion
  • 300 g porcini mushrooms
  • butterclarified fat (for frying)
  • white wine (optional)

Instructions

    Trim the fillets from the duck breasts, pound both sides with a meat mallet or the flat side of a tenderizer, score the fat side crosswise and season.

    Heat a little fat in a large, deep pan, place the duck breasts skin-side down, cover and cook for about 3 minutes. Flip the breasts, reduce heat slightly and continue cooking until done.
