Duck Breast Fillet with Blackberry Sauce

Ingredients
- 4 duck breast fillets (about 200 g each)
- Salt
- black pepper (freshly ground)
- 1 Shallot
- 2 cm ginger
- 1 red chili pepper
- 150 ml poultry stock
- 75 ml apple juice
- 250 g blackberries
- 2 tbsp cold butter
- 1 tsp Honey
- 1 tsp lemon juice

Preheat the oven to 120°C with fan and top heat.

Rinse the duck breasts, pat dry, and cut a diamond pattern into the skin. Season all around with salt and pepper. In a hot pan, brown the skin side for about 5 minutes until golden brown. Flip, remove from the pan, and place on a wire rack. Cook in the oven (with a fat pan underneath) for 25-30 minutes to finish.

Peel and finely dice the shallot. Peel and finely chop the ginger. Wash, halve, deseed, and finely chop the chili pepper. Pour off the fat from the pan and sauté the shallot with ginger and chili in it. Deglaze with poultry stock and apple juice, then simmer for a few minutes. Rinse and clean the blackberries, add them to the sauce, let heat briefly, stir in butter pieces, and season with honey, lemon juice, salt, and pepper.

Remove the duck from the oven, let rest briefly, slice, and serve topped with the blackberry sauce.
