Ingredients

  • 40 g Butter
  • 150 g honey
  • 150 g sugar
  • 2 egg yolks
  • 350 g flour
  • 1 tsp gingerbread spice
  • 75 g ground almonds
  • 1 tsp deer horn salt
  • 1 pinch baking soda
  • 200 g marzipan base
  • 125 g powdered sugar
  • 20 ml rum
  • 250 g orange marmalade
  • 500 g dark chocolate couverture

Instructions

    Preheat the oven to 160°C fan.

    Melt the butter with sugar and honey in a pot until dissolved. Transfer to a bowl and stir in the egg yolks and 50 ml water. Add flour, gingerbread spice, almonds, deer horn salt, and baking soda; knead with dough hooks or hands into a smooth dough that no longer sticks to your fingers. Roll into a square (about 20 x 20 cm) and place on a parchment‑lined tray. Bake in the oven for about 30 minutes (test with a skewer). Remove from the oven and let cool.

    For the marzipan layer, knead the marzipan base with powdered sugar and rum, then roll between parchment paper to match the size of the cake plate.

    Cut the cake horizontally in half; spread half the marmalade on the bottom. Cover with the marzipan layer and spread the remaining marmalade. Place the dough lid on top and cover—best left overnight to set.

    Cut the cake into 5 x 5 cm squares. Melt the chocolate over a double boiler, then dip each domino block in it (use a praline fork). Drain on a rack and let set.

    Decorate with colorful icing sugar as desired.
