Coffee Mousse

Ingredients
- 0.5 l strong coffee
- 2 cloves of mace
- 1 cinnamon stick
- 2 Vanilla Beans
- 1 bay leaf
- 1 tsp coriander seeds
- 150 g white couverture chocolate
- 4 sheets gelatin
- 1 egg
- 1 egg yolk
- 30 ml cognac
- 500 ml whipping cream
- 3 egg whites
- 50 g sugar
- 1 pinch salt
- Baumkuchen cubes or corners (ready-made)
Instructions

Add coffee with the spices to a pot and reduce to about 100 ml, then let cool.

Melt couverture chocolate in a double boiler.

Soak gelatin sheets in cold water.

Whisk egg and yolk together in a bain-marie until creamy, squeeze out gelatin and mix into the chocolate and egg mixture.

Strain the reduced spiced coffee, stir in cognac and add to the mixture; place in the refrigerator until it starts to set.

Beat whipping cream stiffly.

Beat egg whites with sugar and 1 pinch salt stiffly.

Fold whipped cream and beaten egg whites into the coffee mousse.

Line a bowl with a little liquid butter, pour in the mousse, cover and refrigerate until set.

For serving cut small portions and serve with Baumkuchen corners.
