Date-Pistachio Rolls

- 100 g fresh pistachios
- 100 g fresh dates
- 50 g dried apricots
- 40 g walnut kernels
- 40 g ground almonds
- 40 g roasted pistachios (chopped)
- powdered sugar
- baking paper

Finely chop the pistachios in a food processor or with a knife and set aside. Pit the dates and roughly chop them together with the apricots. Mix the dates, apricots, and walnut kernels and finely chop again in the food processor. Combine all ingredients except the pistachios and powdered sugar into a dough; chill for about 30 minutes.

Roll the fruit‑nut mixture into thin logs about 1.5 cm in diameter. Cut these into pieces 3–4 cm long, roll them in the finely chopped pistachios, and store between sheets of baking paper in an airtight container until serving.

Arrange the rolls on plates or trays and dust with powdered sugar to taste.
