Ingredients
- 600 g beef (e.g., shoulder)
- 3 cm ginger
- 2 Garlic cloves
- 2 EL vegetable oil
- 2 EL yellow curry paste
- 400 ml coconut milk
- 1 EL fish sauce
- 2 kaffir lime leaves
- 1 TL brown sugar
- 1 handful Thai basil
- light soy sauce

Rinse the meat, pat dry and slice thinly. Peel the ginger and garlic; cut the ginger into fine strips and the garlic into thin slices.

Heat oil in a hot wok and stir in the curry paste. Sauté briefly, then add the beef and cook 1-2 minutes. Add the garlic and ginger to sauté briefly, then deglaze with coconut milk and about 100 ml water. Stir in fish sauce, kaffir lime leaves, and sugar; simmer gently, partially covered, for about 30 minutes.
