Curry Rice with Raisins and Cashews

Ingredients

  • 1 onion
  • 2 tbsp peanut oil
  • 50 g cashew nuts
  • 200 g Long grain rice
  • 150 g raisins
  • 2 tbsp Curry Powder
  • 1 tbsp turmeric
  • 1 cinnamon stick
  • 400 ml Vegetable broth

Instructions

    Peel and dice the onion. Heat oil in a pan. Sauté onion cubes and cashews over medium heat for 2–4 minutes.

    Add rice, raisins, curry powder, turmeric, and cinnamon stick; stir well. Pour in vegetable broth. Cook for 20–25 minutes over low to medium heat, stirring occasionally, until the broth is absorbed and the rice is al dente.
