Ingredients
- 600 g fresh cauliflower
- 2 cm fresh ginger
- 1 small onion
- 400 ml Vegetable broth
- 200 ml low-fat coconut milk (canned)
- 2 tsp Curry powder
- Salt
- black pepper (freshly ground)
- 2 tbsp lemon juice

Clean, wash and halve the cauliflower. Peel and finely dice the ginger and onion.

Heat oil in a pot and sauté the cauliflower with onions and ginger. Deglaze with broth, pour in coconut milk, and season with curry, salt, pepper, and lemon juice. Simmer over medium heat for 15-20 minutes, then taste again. Serve in cups.
