Currant Jam

The jam made from currants by Spoonsparrow impresses with its summery, slightly tart flavor!

Ingredients

  • 800 g red currants
  • 150 ml red gooseberry juice
  • 500 g gelatin sugar (2:1)

Instructions

    Wash and clean the currants, place them in a large pot and crush with a potato masher. Bring the fruit and gooseberry juice to a boil over medium heat. Stir in the gelatin sugar and simmer for about 2–3 minutes while continuing to stir; then remove from the heat.

    Perform a gel test: put a small amount of the mixture on a dish, chill briefly. If it is not firm enough, reheat for a short time.

    Fill hot jars with the currant jam, removing any foam if present, seal and immediately invert them onto their lids for 10 minutes. Then flip back over and let cool.
