Apple Cake with Orange Marmalade

Ingredients
- 210 g whole wheat flour
- 30 g coconut sugar
- a pinch of salt
- 1 egg
- 180 g butter
- 1 Vanilla bean
- 6 apples (e.g., Boskop)
- 5 tbsp cloudy apple juice
- 120 g orange marmalade
- 0.5 lemon

Mix 200 g flour with coconut sugar and a pinch of salt, sift onto a work surface, create a well in the center, crack the egg into it, and scatter 140 g butter in small pieces around the well. Quickly knead by hand into a smooth dough, shape into a ball, wrap in cling film, and refrigerate for 30 minutes.

Meanwhile split the vanilla bean lengthwise and scrape out the seeds with a knife. Peel, quarter, core, and dice 3 apples; combine them with apple juice and vanilla seeds in a pot and bring to a boil. Cook gently for about 10 minutes until soft, stir in the marmalade, remove from heat, and puree finely.

Squeeze the lemon, peel, quarter, and cut the remaining apples into narrow slivers. Mix immediately with the lemon juice.

Roll out the dough on a lightly floured surface slightly larger than the pan, line the pan and lift up a rim.

Spread apple-orange purée over the base and arrange apple slivers in a tiled pattern. Dot the remaining butter pieces on top and bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for about 30 minutes. Remove, cool, and serve in slices.
