- 500 g waxy potatoes
- 2 carrots
- 200 g Green beans
- 200 g cauliflower florets
- Salt
- 20 g butter
- 1 l vegetable broth
- 0.5 bunch Parsley
- 100 ml heavy cream
- 2 garlic sausages
- Pepper

Peel, wash and finely dice the potatoes. Peel, wash and dice the carrots. Wash the beans and trim ends. Clean the cauliflower and cut into small florets. Blanch cauliflower and beans in plenty of salted water for about 8 minutes, shock with cold water and drain well.

Heat butter and sauté half the potatoes, add broth and simmer for 10 minutes. Blend with an immersion blender, add remaining potatoes and vegetables, and gently simmer for another 15‑20 minutes. Stir in cream.

Wash parsley and cut into strips. Slice sausage and add to soup, heat for 5 minutes. Before serving sprinkle with parsley and season with salt and pepper.
