Cucumber Soup with Shrimp

Ingredients

  • 2 cucumbers
  • 200 g potatoes (starchy, boiling type)
  • 2 shallots
  • 1 Garlic clove
  • 600 ml Vegetable Broth
  • 200 g North Sea shrimp
  • 2 tbsp Rapeseed oil
  • 4 tbsp crème fraîche
  • 0.5 bunch dill
  • Salt
  • Cayenne pepper
  • ground black pepper

Instructions

    Peel and dice the cucumbers.

    Peel and grate the potatoes.

  3. 3.

    Peel and finely dice the shallots and garlic. Sauté in hot oil, add the cucumbers and deglaze with broth. Add the potatoes and bring to a boil. Then simmer over gentle heat for about 20 minutes.

    Wash the dill, shake dry and roughly chop half. Stir in 2 tbsp crème fraîche into the soup and blend until smooth. Add the North Sea shrimp, let it heat through, season with salt, pepper and cayenne pepper. Ladle into cups and garnish with remaining crème fraîche and dill sprigs before serving.
