Cucumber Relish

Ingredients

  • 400 g pickled cucumbers (peeled, halved and cut into pieces)
  • 2 apples (peeled, cored and diced)
  • 1 small onion (finely diced)
  • 125 g raisins
  • ground cloves
  • 0.5 tsp Black pepper
  • 1 tsp ginger (grated)
  • 1 garlic clove (crushed)
  • 1 tsp salt
  • 250 ml red wine vinegar
  • 175 g sugar

Instructions

    Mix together the cucumber, apples, onion, raisins, spices, ginger, garlic and the salt in a pot.

    Cover and heat on low for 45 minutes, stirring occasionally so nothing sticks to the bottom.

    Add the vinegar and simmer, stirring occasionally, until the mixture takes on a jam-like consistency.

  4. 4.

    Stir in the sugar, season to taste, bring to a boil and then pour into sterilised jars. Close well and turn upside down to cool.
