Ingredients
- 1 kg small yellow zucchinis
- 2 red bell peppers
- 250 g shallots
- 3 Garlic cloves
- 1 tsp fresh grated ginger
- 4 tbsp raisins
- 500 ml white wine vinegar
- 100 g cane sugar
- 1 tsp salt
- 0.25 tsp cayenne pepper
- 0.25 tsp allspice
- 0.25 tsp Coriander

Wash, trim and finely dice the zucchinis. Wash, halve, seed, trim and finely dice the bell peppers. Peel and finely chop the shallots and garlic.

Add the zucchini, bell pepper, shallots, garlic, ginger and raisins to a pot, pour in the vinegar, stir in sugar, salt, cayenne pepper, allspice and coriander, then simmer over medium heat for about 45 minutes, stirring occasionally.

Fill the hot, rinsed jars with the chutney, seal immediately and invert them to cool for about 15 minutes. Then flip them upright and allow to cool completely.

Let the relish mature for 4 days before serving.
