Ingredients
- 2 salad cucumbers
- 1 Shallot
- 40 g walnut kernels
- 1 apple
- 350 g canned tuna (in own juice)
- 3 tbsp Cream cheese
- 1 tbsp coarse mustard
- 2 tbsp mayonnaise
- 1 tsp lemon juice
- Salt
- Pepper (freshly ground)
- parsley (for garnish)

Wash the cucumbers, peel into thin strips lengthwise and cut horizontally into about 12 pieces roughly 4 cm wide. Hollow out all but a narrow rim and place on a plate or board.

Peel and finely dice the shallot. Chop the walnuts finely. Peel the apple, quarter it, remove the core, and grate the quarters finely. Drain the tuna well and flake it with a fork in a bowl. Mix the cream cheese with mustard and mayonnaise, add the nuts, apple, and shallot, then combine everything thoroughly. Season with lemon juice, salt, and pepper, fill the cucumber boats, and serve garnished with parsley.
