Pikante Spargelbrote

Ingredients
- 220 g quark
- 4 EL whipping cream
- 2 Eggs
- 8 EL plant oil
- Salt
- 450 g flour
- 2 tsp Baking powder
- flour (for working)
- 12 stalks green asparagus
- 12 stalks white asparagus
- Salt
- 150 g chorizo
- 150 g processed cheese
- pepper (ground)
Instructions

Whisk the quark with cream, eggs, oil and 1 tsp salt; add flour and baking powder and knead into a smooth dough. Cover and refrigerate for about 30 minutes.

For the topping peel the lower third of the asparagus, fully peel the white asparagus. Cut the stalks diagonally in half and parboil in salted water: white asparagus ~10 minutes, green asparagus ~5 minutes. Drain and let cool slightly. Dice the chorizo small.

Preheat the oven to 180°C fan.

Knead the dough on a floured surface and roll it out to about 0.5 cm thickness. Cut into 8 rectangles (~14x6 cm). Place on one or two parchment‑lined baking trays. Brush with cheese, top each with two halves of green and white asparagus, sprinkle with chorizo, season with pepper and bake in the oven for about 25 minutes until golden brown and crisp.
