- 1 box garden cress
- 2 shallots
- 1 tbsp Olive Oil
- 1 tsp powdered sugar
- 80 ml port wine
- 250 g quark
- 3 tbsp sour cream
- Salt
- Pepper (freshly ground)

Harvest the cress with scissors. Peel and finely chop the shallots, then sauté them in a pot with the oil until translucent. Sprinkle with sugar, allow to caramelize slightly, then deglaze with port wine. Simmer gently for 3-4 minutes, remove from heat, and let cool.

Mix the quark with sour cream and the shallot-port wine mixture, then fold in half of the cress. Season with salt and pepper, serve with fresh country bread, and offer the remaining cress on the side.
