Ingredients

  • 200 g Flour
  • 2 Eggs
  • 500 ml milk
  • a pinch of salt
  • 40 g clarified butter
  • 24 stalks green asparagus
  • 16 slices Parma ham
  • butter (for greasing the pan)
  • 150 g freshly grated Parmesan
  • black pepper (freshly ground)

Instructions

    Whisk the flour with the eggs, milk and a pinch of salt into a smooth batter and let it rest for 20 minutes. Preheat the oven to 200 °C (400 °F) with upper and lower heat. Heat a little clarified butter in a pan and pour in one ladleful of batter. Tilt and rotate the pan to spread the batter evenly, cooking each side for about 2 minutes. Remove, keep warm, and repeat with the remaining batter until all crepes are cooked.

    Wash the asparagus, peel the lower third, trim the woody ends, and blanch in boiling salted water for 5–7 minutes. Remove, shock in cold water, and drain well. Lay the crepes side by side on a sheet, top each with two slices of ham and three stalks of asparagus, roll them up, place in a greased baking dish, sprinkle with Parmesan, and bake in the preheated oven for 15–20 minutes until golden. Serve sprinkled with freshly ground pepper.
