Ingredients
- 1 onion
- 1 Garlic clove
- 1 Carrot
- 100 g Celery Root
- 100 g starchy potatoes
- 2 tbsp butter
- 750 ml vegetable broth
- 50 g Gouda cheese (shredded)
- 100 g sour cream (10% fat)
- 3 tbsp medium-hot mustard
- Salt
- ground pepper

Peel and dice the onion, garlic, carrot, celery root, and potatoes. Sauté together in hot butter for 2–3 minutes. Add the broth and simmer gently for about 20 minutes.

Grate the Gouda during this time. Then puree the soup finely. If a thicker consistency is desired, let it reduce further or add more broth as needed.

Remove from heat, stir in the sour cream (leave 2 tbsp), mustard, and Gouda, then season with salt and pepper to taste.

Serve the soup in bowls and garnish with a dollop of sour cream. Sprinkle with extra pepper before serving.
