- 1 clove garlic
- 1 Shallot
- 2.5 tbsp butter
- 2.5 tbsp flour
- 100 ml dry white wine
- 700 ml vegetable broth
- 100 ml heavy cream
- 150 g aged Gouda
- 100 g Gruyère cheese
- 2 tbsp crème fraîche
- Salt
- black pepper (freshly ground)
- Nutmeg (freshly grated)
- peas (for serving)

Peel and finely chop the garlic and shallot. In a pot, sauté them in melted butter until translucent. Sprinkle with flour, let it lightly brown, then deglaze with white wine while stirring. Add vegetable broth and heavy cream, simmer for about 5 minutes over medium heat.

Grate the cheese, stir it into the soup, and allow it to melt. Continue simmering for another 4 minutes, constantly stirring, then fold in crème fraîche and season with salt, pepper, and nutmeg. Serve in a bowl topped with peas.
