- 2 shallots
- 1 Garlic clove
- 2 tbsp butter
- 800 ml vegetable broth
- 150 g goat cream cheese
- 100 g heavy cream
- Salt
- Pepper
- 2 tsp lemon juice
- 2 slices white bread
- 1 tbsp butter
- dill

Peel and finely chop the shallots and garlic, then sauté them in hot butter in a pot. Add the vegetable broth and bring to a boil. Roughly crumble the cheese and add it with the cream to the soup. Stir over gentle heat until the cheese melts.

Puree the soup finely and season with salt, pepper, and lemon juice. Dice the bread and toast the cubes in hot butter until golden brown.

Serve the soup in bowls and sprinkle with chopped dill; accompany with the croutons.
