Ingredients

  • 1 large knollensellerie
  • 3 ripe apples
  • 1 Shallot
  • 2 Garlic cloves
  • 2 slices whole grain rye bread
  • 10 slices breakfast bacon
  • 1 tbsp plant oil
  • 150 ml white wine
  • 700 ml vegetable broth
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 100 ml heavy cream
  • thyme

Instructions

    Wash the celery, remove the root, peel and dice into small cubes. Wash, peel, halve, core and cube the apples similarly. Peel the shallot and garlic and finely dice them. Cut the bread and bacon into 2 cm strips.

    In a pot with 1 tbsp oil, crisp the strips until golden. Remove and drain on kitchen paper. Sauté the onion and garlic in the bacon fat for 1-2 minutes until translucent, add the celery and apple cubes and cook together for 3-5 minutes.

    Deglaze with white wine and pour in the vegetable broth. Season with salt, pepper and nutmeg. Simmer gently for 10–15 minutes until tender, then blend to a smooth consistency. Stir in heavy cream, bring to a brief boil and adjust seasoning. Serve in bowls garnished with bread and bacon strips and fresh thyme leaves.
