Cold Garlic Soup with Almonds

Ingredients

  • 500 g seedless white grapes
  • 1 cucumber
  • 1 Shallot
  • 2 cloves garlic (chopped)
  • 500 g low-fat yogurt
  • 1 tsp salt
  • white pepper
  • 50 g peeled almond kernels
  • 2 tbsp toasted almond flakes

Instructions

    Wash the grapes, halve them and set aside 3-4 tbsp for garnish. Add the rest to a blender.

    Peel and deseed the cucumber, roughly chop it. Peel the shallot and garlic, coarsely chop. Add everything with the grapes to the blender and blend very finely. Strain through a fine sieve to remove solids.

    Add the drained almonds back into the blender, add yogurt and blend again until smooth. Season with salt and pepper. Chill well and serve garnished with almond flakes and grapes.
