- 2 egg yolks
- 3 tbsp sugar
- 2 tbsp lemon juice
- 3 tbsp egg liqueur
- 100 g whipping cream
- 150 g Strawberries
- 2 sprigs Mint

Whisk egg yolks, 2 tbsp sugar and 1 tsp lemon juice in a double boiler until creamy; fold in egg liqueur and let cool while stirring. Fold stiffly whipped cream into the mixture, pour into two molds, and place in the freezer for 4 hours.

Clean, wash strawberries and set aside 6; puree the rest, strain through a sieve, and mix with lemon juice and sugar. Slice remaining strawberries.

Distribute sauce on two plates. Briefly dip parfait molds in hot water, then pour onto the sauce. Garnish with strawberry slices and mint leaves.
