Creamy Berry Ice Cake

Fragrant berry flavor meets silky creamy ice: Try the cream ice cake by Spoonsparrow!

Ingredients

  • 1 layer of light sponge cake
  • 3 tbsp raspberry jam
  • 750 g mixed red berries (optional)
  • 150 g sugar
  • 2 tbsp raspberry liqueur
  • 600 g whipping cream
  • powdered sugar (for decoration)
  • Amaretti cookies (for decoration)

Instructions

    Wash and clean the berries, reserving a few for garnish, and cut into small pieces if desired. Blend 2/3 of them with 3 tbsp sugar, strain through a sieve, and chill. Mix the remaining berries with 2 tbsp sugar and raspberry liqueur and refrigerate.

    Whip the cream with the remaining sugar until stiff peaks form and fold in the berry puree.

    Spread the lightly warmed raspberry jam over the sponge cake and place a ring around the base.

    Fill half of the berry cream, spread marinated berries on top, add the rest of the berry cream, smooth the surface, and chill for about 4-5 hours. Before serving, set Amaretti cookies on the rim of the ice cake and dust with powdered sugar.
