Cream Cheese Balls on Salad
Fresh cheese balls on salad: Orange sauce adds the finishing touch to the fresh greens. Half a portion of cream cheese balls makes a great starter!
Ingredients
- 250 g young spinach leaves (or baby leaf mix)
- 150 g small radicchio (1 small radicchio head)
- 2 Tomatoes
- 1 orange
- 0.5 bunch Basil
- 50 g goat cream cheese (a slightly firmer variety)
- 50 g Low-Fat Quark
- Salt
- Pepper
- 1 tbsp balsamic vinegar
- 1 tbsp Olive Oil

Clean, wash, and dry spinach and radicchio. Slice radicchio into thin strips and combine with spinach in a salad bowl.

Wash tomatoes, halve them, remove seeds with a spoon, cut into thin slivers, and add to the salad.

Peel the orange so that all white pith is removed.

Cut the fruit flesh between the separating membranes, catching the juice in a small bowl as you do so.

Gently mix the orange segments with spinach, radicchio, and tomatoes.

Wash basil, pat dry with paper towel, tear leaves, and finely slice them with a large knife.

In a bowl whisk goat cream cheese, low‑fat quark (drained if necessary), and basil together. Season with salt and pepper.

Using damp hands, shape small balls from the cheese mixture.

Whisk vinegar, oil, salt, and pepper into the collected orange juice. Pour this sauce over the salad, toss well, and serve with the cheese balls.
