Ingredients

  • 1 loaf roll (from yesterday)
  • 500 g ground lamb
  • 1 egg
  • Salt
  • Pepper
  • 1 onion
  • 2 Garlic cloves
  • 1 tsp finely chopped red chili
  • 6 tbsp vegetable oil
  • 0.5 bunch coriander
  • 250 g instant couscous
  • 2 tbsp butter
  • 2 tbsp coriander leaves
  • lime wedge (for serving)

Instructions

    Soak the loaf roll in lukewarm water, squeeze out excess liquid, and mix with ground lamb, egg, salt, and pepper. Finely chop half of the coriander and fold into the mixture. Peel and finely mince the onion and garlic; sauté with chili in 1 tbsp oil, then combine with the meat mixture. Shape small balls with damp hands and sear them in the remaining oil until browned, then finish cooking at 80°C in the oven.

    Pour 250 ml hot water over the instant couscous, let stand for 5 minutes, then fluff with a fork. Heat butter in a pan, briefly sauté the couscous, season with salt and pepper. Arrange the meatballs on top of the couscous, sprinkle with coriander leaves, and serve with lime wedges.
