Ingredients
- 150 g couscous (instant)
- 150 ml hot vegetable broth
- 1 Garlic clove
- 0.5 Red Onion
- 1 handful fresh herbs (e.g., basil, parsley)
- 120 g goat cheese
- 3 tbsp olive oil
- Salt
- pepper (ground)
- 8 zucchini blossoms
Instructions

Pour the couscous into a bowl with boiling broth and cover for about 10 minutes to absorb. Fluff with a fork.

Peel the garlic and press through a press. Peel the onion and dice very finely. Wash, dry shake, and chop the herbs. Crumble the goat cheese in a separate bowl.

Add the garlic, onion, 1 tbsp olive oil, and herbs to the couscous mixture. Season generously with salt and pepper.

Remove the stamens and inner pots from inside the blossoms, rinse the zucchini, and pat dry gently.

Fill each blossom with the vegetable mixture and carefully twist the tips together.

Optionally, cook in a hot pan with oil, turning gently for about 2 minutes on each side. Drizzle with basil butter and sprinkle with Parmesan before serving.
