Ingredients
- 750 ml vegetable broth
- 200 ml milk
- 200 g cornmeal
- 150 g cheddar
- 1 tbsp Olive Oil
- 40 g Butter
- Salt
- Pepper
- 1 Garlic clove

1. Grate the cheddar finely, set aside about 30 g for garnish.

2. Heat the vegetable broth and milk in a pot, add 1 tbsp oil and bring to a boil briefly.

3. Gradually stir in the cornmeal, bring to a boil again, season with salt and pepper.

4. Squeeze in the garlic clove, then stir in butter and cheese; cover and simmer on low for 5-10 minutes until thickened.

5. Spread the polenta onto preheated plates and sprinkle with remaining cheese before serving.
