Ingredients
- 150 g plums
- 1 tsp butter
- 1 tbsp balsamic vinegar
- 2 pork loin steaks (about 140 g each)
- 2 slices Gouda cheese
- 2 tbsp flour
- 1 egg
- 40 g cornflakes
- Salt
- Pepper (freshly ground)
- oil for frying

Wash the plums, pit them and cut into wedges. Toss in hot butter and add the balsamic vinegar. Remove from heat and let rest.

Flatten the schnitzels, top with cheese slices and fold together. Season with salt and pepper, dredge in flour, dip in beaten egg, then coat with cornflakes.

Place the meat in hot oil in a pan and fry at moderate heat for about 3-4 minutes until golden brown. Flip and cook another 3-4 minutes to finish.

Drain on kitchen paper and serve with the plum accompaniment.
