Ingredients
- 2 fresh corn cobs
- 2 egg yolks
- 1 Egg white
- 3 tbsp Flour
- Salt
- Pepper
- clarified butter (for frying)
- 0.5 bunch watercress
- 4 sprigs dill
- 150 g fine smoked salmon
- 4 tbsp keta caviar
- 4 tbsp Sour cream
Instructions

Clean and wash the corn, then use a sharp knife to scrape off the kernels. Mix in a bowl with egg yolks, salt, and pepper. Whisk the egg white very stiffly, fold it in, sprinkle flour over the mixture, and stir until combined.

Heat clarified butter and fry portions of each side for 2 minutes until golden yellow patties form. Drain on kitchen paper and arrange on plates.

Sprinkle watercress and dill over the patties, place salmon on top of the herbs, garnish with a dollop of crème fraîche, and sprinkle keta caviar on top.
